In San Marzano the winemakers take care of their small vineyard as they do with a garden.
Their stories are many, as are the names of their families.
We chose one, Talò, to thank them ideally: family by family, history by history.
San Marzano Cellars
PREMI AND AWARDS FOR VINTAGE
Vines: 85% Negroamaro, 15% Malvasia Nera di Brindisi.
Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.
Soil: Medium-textured clayey, shallow and with good presence of skeleton.
Cultivation: Espalier (4,500 vines per hectare).
Harvest: Second half of September.
Vinification: Thermo-controlled maceration of about 10 days followed by alcoholic fermentation with selected yeasts.
Aging: In French oak barrels for 6 months.
Organoleptic characteristics: Bright ruby red color with garnet hues; intense aroma, with hints of cherry and plum, spicy, with notes of Mediterranean herbs. A full-bodied wine with a pleasant freshness in the finish; ready to drink.
Pairings: Cold cuts and cold cuts, robust first courses, red meats and cheeses.
Serve at: 16-18 ° C.
