
WINE, BEER, OIL AND GOURMET FROM APULIA
Grape variety: Primitivo.
Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.
Soil: Medium-textured clayey, shallow and with good presence of skeleton.
Cultivation: Espalier (5,000 vines per hectare).
Harvest: Second week of September.
Vinification: Thermo-controlled maceration of about 10 days followed by alcoholic fermentation with selected yeasts.
Aging: In French and American oak barrels for 6 months.
Organoleptic characteristics: Ruby red color enriched with violet reflections; opulent fragrance that recalls ripe cherries and plums, with pleasant notes of cocoa and vanilla. A wine with a remarkable structure, softened by the persuasive warmth of Primitivo, which ends in notes of long sweetness.
Pairings: Robust pasta dishes, lamb meats, game with elaborate sauces and hard cheeses.
Serve at: 16-18 ° C.
