Grape variety: Negroamaro.
Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.
Soil: Medium-textured clayey, shallow and with good presence of skeleton.
Cultivation: Espalier (4,500 vines per hectare).
Harvest: Mid-September.
Vinification: Thermo-controlled maceration of about 10 days followed by alcoholic fermentation with selected yeasts.
Aging: In French oak barrels for 6 months.
Organoleptic characteristics: Purple red color with violet reflections: intense and persistent aroma, with hints of blackcurrant and wild berries, spicy, with balsamic and vanilla notes. A full-bodied wine, velvety and harmonious, with a long and savory finish.
Pairings: Robust first courses, meats and cheeses.
Serve at: 16-18 ° C
