
WINE, BEER, OIL AND GOURMET FROM APULIA
By tradition and care we take care of the withering of 11 rows of Primitivo: where the sapling stocks are welded to reddish soils with calcareous veins; with the patience that the trade gives us, we dare to forge from these grapes the sweetest nectar, to ooze a few, highly counted drops. Unreproducible wine, made without calculation, like everything torn from practical utility. To be tasted preferably according to inspiration, whenever "of pleasure punga vag effet".
Grape variety: Primitivo.
Area: Very old selected vineyards in the municipalities of San Marzano (TA) and Sava (TA).
Soil: Red residual earth with a fine texture with a calcareous substratum, sparse rocky outcrops and an intense presence of iron oxides.
Cultivation: Saplings of at least sixty years of age (5,000 per hectare).
Harvest: First days of October.
Vinification: After being dried on the plant, the grapes are harvested manually. Maceration takes place for 10 days with indigenous yeasts selected in the vineyard. Fermentation takes place at a controlled temperature of 24-26 ° C.
Aging: In French and American oak barrels for 12 months.
Organoleptic characteristics: Intense ruby red color with garnet hues; persistent and complex fragrance, with hints of over-ripe fruits reminiscent of cherry jam and dried figs, light spicy notes; the body pleasantly wraps the palate with honey-like sensations mitigated by the right acidity.
Pairings: Dry almond-based pastries, fruit tarts, strong-flavored and seasoned cheeses. Meditation wine.
Serve at: 18 ° C.
